How to Make Sheer Khurma: A Delicious Eid Recipe

 Sheer khurma is a very delicious and awesome sweets recipe sheer khurma is very popular in all over ondia in festival of eid, and Eid is ckurmas sheer khurma recipein every make in every home it is made with milk, dates, and many dried fruits and sugar and this recipe is liked by every people, in pakistani language ‘sheer’ means milk and ‘khurma’ means dates sheer khurma taste is very awesome becase it is creamy and jucy dessert,

I'm sharing a very easy recipe. Now, it is made differently in each household.The recipe that I'm making is very simple.

I'm not going to use condensed milk. With just milk, vermicelli, nuts & dried fruits, I'm going to make Sheer Kurma.& this Sheer Kurma recipe turns out really beautiful & deliciSheerr Sheer Kurma, firstly we will have to soak some nuts & dried fruits for this recipe.

                                           

Let's see how to do that prep.

 

Soaking & prep

So here I have already soaked some nuts & dried fruits. Let's have a look at them.

First, of all I've taken 6-7 dry dates which are called "Chuare".

They comcolorscolours, if you get darker ones then it's better.

I had soaked them overnight like this.

Along with it I have also soaked some nuts.

 

Ingredients

So 15-18 cashews,

15-18 pistachios,

1.5 tbsp Chironji seeds (Cuddapah almond seeds),

& 15-18 almonds,

 

I've soaked all these ingredients.

Now, we have to peel them. So peel the almonds like this. You can see that I've peeled the almonds.

 

Similarly you have to peel the skins of the pistachios as well.

You can see that we've peeled the pistachios as well.

After that you have to rub the soaked chironji like this.

I had washed the chironji before soaking.

 

 Once soaked, it's skin comes off really easily.

Now, to separate the skins what you have to do is spread them on the plate like this.

Let it dry out or keep it in the microwave for 30 seconds & the skin will dry out.

& like this you can let the skins fly off.

 

Discard the water that the cashews were soaked in.

Along with that I've taken 1tbsp raisins.

Now, you have to chop the nuts on a chopping board.

So take the almonds & cut them into slivers or you can even chop them like this.

Transfer the chopped almonds into a bowl.

 

Now, you have to chop the cashews similarly as well.

Once chopped transfer the cashews to the same bowl as well.

Chop the pistachios similarly & transfer them to the same bowl.

Add the cleaned chironji seeds to the same bowl.

 

Few Tips of Making Sheer Khurma

 

1. Firstly we will have to soak some nuts and dried fruits for this recipe,

Let’s learn how to do that preparation,


Now take the dried dates that we had soaked.

You have to de-seed them & chop them like this.

If you don't find the dried dates, then you can use regular dates as well. Try to get the harder variety of the dates.

 

If you don't find them, use any dates. But dates are essential for this recipe.

Once chopped transfer them to a bowl too.

Here, I've taken 30 grams of whole wheat vermicelli.

 

break the vermicelli like this using your hands.

Whole vermicelli is not added the Sheer Kurma, but crushed vermicelli is added. So crush them like this.

 

So once you have prepped for Sheer Kurma like this, then you can quickly make Sheer Kurma.

In a lot of recipes, nuts aren't soaked, but used directly. So there are a lot of ways.

I'm showing you this method today.

 

This makes a very delicious Sheer Kurma.

Once you have made this prep, then we have to boil milk on side & then we will roast the nuts & vermicelli in ghee.

 

Let's see how that process is done.

To boil the milk, take a thick bottomed pan.

Cooking process

To that, you have to add 2 litres of flu fat milk, with full cream.

After adding the milk, keep the flame high & bring the milk to a boil.

Keep stirring in between to avoid the milk from sticking to the bottom of the pan.

& bring this milk to a boil.

 

Once boiling, you have to transfer this vessel containing milk to a different stove top.

& let the milk reduce on low to medium low flame.

You can keep stirring in between.

 

Now, take another pan & add 2 tbsp desi ghee.

Once the ghee is hot, add the nuts that we had chopped like cashews, almonds, pistachios & chironji.

 

Continue to roast them for 3-4 minutes on a low flame until they change their colour just slightly & not too deep.

You can see that the nuts have got slight colour on them. Take them out & transfer them to a bowl.

 

Now, keep the same pan on stove & add the same residual ghee in it. We'll roast everything in the same ghee.

Now to this add the dates that we had chopped.

& add raisins too.

 

Roast both these things for 2-3 minutes on medium flame.

After roasting them for 2-3 minutes, transfer them to a bowl too.

 

Now put the same pan back on flame & add 2-3 tbsp desi ghee.

Once the ghee is hot, then add the vermicelli that we had crushed earlier.

& on low flame, patiently roast them until they get a golden brown or a dark brown colour.

 

Roast them on low flame otherwise the vermicelli can easily get burnt.

You can see that I've roasted the vermicelli on a low flame.

 

Now, transfer these hot vermicelli in hot oil immediately.

& add the dried soaked dates & raisins as well.

 

also add the toasted nuts that we had prepared earlier.

I'm keeping some nuts aside for the garnish.

 

Now add a few strands of saffron to it. This is optional.

Now stir everything very well.

 

Now, I'm shifting this pot on the bigger stove.

 

Now, you have to cook & reduce the Sheer Kurma on medium flame nicely.

So that the flavour of dates, vermicelli & all other things melds into the Sheer Kurma.

& our milk thickens nicely.

 

We will reduce the milk upto 2/3rds, as in let the 1/3rd of the fluid evaporate to get a thicker consistency of the milk.

 

Now, for the next 10 minutes, cook the Sheer Kurma like this & let the milk thicken nicely.

 

Cook the Sheer Kurma while stirring & let it reduce.

So that it becomes rich & creamy.

 

Now, at this stage, if you do want to use condensed milk, then add 1 can or 200 grams of condensed milk to it.

It will make your job a little easier.

 

The condensed milk will give that richness & creaminess,

& the condensed milk will also add sweetness to it, so you wouldn't need to add any additional sugar to it.

If you like your desserts slightly less sweet. If you like it very sweet then you may need to add additional sugar.

 

You can add condensed milk at this stage.

 

Today, we aren't using condensed milk,

that's why I'm still going to cook it down further.

It won't take too long. If you cook your Sheer Kurma for 20-25 minutes, then your job will be done.

 

& it will result in a perfect Sheer Kurma without adding condensed milk.

So, we aren't adding any today.

 So we'll cook the Sheer Kurma for 10-15 minutes more.

Then we'll add sugar & cook it even further for 10-15 minutes. So in total, you have to cook Sheer Kurma for 25-30 minutes.

 

Adding the condensed milk will make the process shorter & your work will be done in 10 minutes.

 

I've told you both the ways.

Once you have cooked the Sheer Kurma for 10-15 minutes,

After that let's see the process of adding sugar & cooking further.

You can see after cooking for 10-12 minutes that it has reduced slightly.

At this stage, I'm adding 120 grams of sugar to this.

 

& I've added 1/2 tsp of cardamom powder.

Now, cook the Sheer Kurma for 10-15 minutes, while stirring in between,

So that it reduces & thickens further more.

 

You can see after 10-15 minutes, it has reduced further.

We had started the milk from this level & you can see how lower the level is now.

The milk has reduced quite a bit & you can see how rich & creamy the consistency has become.

 

At this stage, you can serve it hot as it is,

Or chill it & serve it cold.

& our Sheer Kurma is ready.

 

Did you see how easy it is to make Sheer Kurma.

Sheer Kurma can be served hot, cold or lukewarm.

It's each one's own preference.

 

Now, personally I love chilled Sheer Kurma. So I'm going to refrigerate it & chill it.

Just remember that if you want to serve it hot & you like the consistency thicker than this,

 

then cook it for 5-10 more minutes & once it reduces a little more, then you can serve it hot, thick & creamy.

 

If you are going to serve it chilled, then stop cooking at this stage, as after cooling down, the Sheer Kurma will thicken more.

& you can serve that thick Sheer Kurma.

 



So, if you want to serve it cold, then don't cook it any further. I've informed you about that.

I'm going to chill it now. After chilling, let's plate it YFL style...
